Chicken Cacciatori

3 chicken breasts (25 ounces) 1 medium onion chopped1 can diced tomatoes (15 ounces)3 carrots cut in 1/2 inch slices1 medium cjhopped green pepper1 cup sliced mushrooms1/2 cup red wine1/2 tsp thyme1/2 teasponn basil1/4 oregano3 tsp crushed garlicsalt and papper to taste
Cut chicken in one inch pieces.
In a heavy pan add chopped onion, chopped green pepper. and garlic. Stirring occasionially, stir until limp. Slowly add chicken, stirring and cooking until no longer pink. Add tomatoes, wine, sliced carrots, chopped green pepper, sliced mushrooms, and condiments. Cook on low for low for 30 minutes.
Serve plain or over rice or pasta.
Delicious
Serve as is, or with rice, or noodles.
