Ingredients
Ingredients:2 Tbsp applesauce1 Tbsp vegetable oil1 Tbsp buttermilk1/4 tsp vanilla extract1/4 cup + 1 Tbsp all-purpose flour2 1/2 Tbsp packed light-brown sugar3/4 tsp ground cinnamon1 dash ground nutmeg (optional)1/4 tsp baking powder1/8 tsp (scant) salt1 Recipe Cream Cheese Icing, recipe followsCream Cheese Icing1 Tbsp Cream Cheese or Neufchatel Cheese, softened2 Tbsp powdered sugar1 tsp milk
Directions
Mix all ingredients and divide into 2 mugs. Microwave on high for 1 minute and check for doneness. Microwave an additional 15 seconds if neccessary. Serve warm topped with cream cheese frosting. Enjoy!
