Oatmeal Banana Breakfast Muffins

Old Fashioned Quaker Oatmeal- Plain 1 1/2 cups Wheat flour, white, all-purpose, unenriched, 1 cup Baking Powder, 3 tsp Salt, .5 tsp Cinnamon, ground, 1.5 tsp Nutmeg, ground, .5 tsp Egg white, 1/2 cup or 2 eggs Applesauce, cinnamon 3 TBSP Canola Oil, 1 TBSP Granulated Sugar, 6 TBSP Milk, nonfat, 2/3 cup Mashed bananas, fresh, 3 medium (7" to 7-7/8" long) Grated apple, fresh, 1 large (3-1/4" dia)
Mix together and set aside dry ingredients.
Beat together egg whites, sugar, applesauce and oil.
Blend in milk.
Fold in dry ingredients.
When flour is just incorporated, fold in fruit. DO NOT OVER MIX!
Fill muffin tins with generous 1/3 cup of batter.
Bake at 350 for 20 - 25 minutes.
