Sugar-free chocolate mousse

Ingredients
1/4 cup Ideal sweetener for baking1 tbsp + 2 tsp sweetener2 tbsp cocoa powder2 tbsp unsweetened almond milk1 1/2 tsp wheat flour1 large egg, separated1/8 tsp vanilla extract1/8 tsp cream of tartar
Directions
Preheat oven to 350º.
Coat two ramekins with baking spray, sprinkle with 2 tsp sweetener.
Mix 1/2 cup water with 1/4 cup sweetener, the cocoa, almond milk, flour and egg yolk in a metal bowl.
Lower bowl into larger pan of boiling water and simmer for 10 minutes, stirring constantly.
Remove from heat, add vanilla.
Beat egg white and cream of tartar until stiff peaks form.
Gradually beat in 1 tbsp sweetener.
When chocolate mix is completely cool, carefully fold in egg white mixture. Don't overmix as this will destroy the bubbles so crucial to the souffle.
Pour mix into prepared ramekins and bake for 20 minutes.
