Antioxident Soup

Ingredients
8 oz enoki mushroom, fresh, sliced8 oz shiitake mushroom, fresh, sliced6 medium carrots, sliced thin1 small celery heart, sliced thin1 large onion, chopped10 green onions, chopped, whole stalks1 bunch fresh spinach, torn1 bunch fresh watercress, chopped2 leeks, white and light green only, sliced2 cups fresh brussel sprouts, quartered1/4 cup fresh cilantro, chopped4 cloves garlic, minced2 cups chicken or vegetable broth3 cups water
Directions
Combine all ingredients in a soup pot and boil until tender. Add salt and pepper to taste at the table. Makes 6 HUGE 3-cup servings.
