Joy of Cooking Banana Nut Muffins

Ingredients
1.5 cups flour.5 cups wheat flour.5 t baking soda2 t baking powder.25 t salt1 t cinnamon2/3 c chopped nuts (pecans or walnuts)1 egg.75 c light brown sugar, packed1/3 c veg. oil1.5 c mashed ripe bananas1 t. vanilla extract
Directions
combine dry ingredients in one bowl. In another bowl, beat eggs, sugar, oil, banana, and vanilla. Fold egg mixture into dry ingredients just until moist. Do not over mix. Place about 1/3 cup mixture into lined muffin tin. Bake 375 until toothpick comes out clean.
