Tamela's shrimp fried rice

Ingredients
several tbsp onions choppedbaby carrots, sliced thin1/3 zuchini quartered and sliced about 1/4" slicescouple tablespoons of mushrooms3/4 brown rice - from refrigerator from prev day 1/5 tbsp butter - added 1/2 tbps at a time6 oz shrimp ready to cook
Directions
1/2 tbps butter into non-stick pan
start with onions and carrots over low heat
until carrots are almost soft
add zuchini and mushrooms
then add rice (if you must you can add 1/2 tbsp butter before rice) add small splash of soy sauce and cook another 3-4 min to cook off some of the alcohol taste

put on plate
then add 1/2 tbsp of butter and splash of soy sauce to pan and add shrimp
may turn heat up to med, don't take it all the way to high - it burns the butter

Serving Size: 1 nicely full lunch plate!
