meatless spinach and macaroni casserole

Ingredients
1 box of pasta (I prefer rotini)1 large can crushed tomatoes2 cloves garlic-diced1 poly-bag meatless crumbles1 medium onion, diced1 box frozen spinach3 tbsp olive oilgrated parmesan cheese1 tsp oregano1 tsp salt1 tsp fresh ground black pepper
Directions
cook rotini according to directions
In large frying pan, heat 3 tablespoons olive oil to med heat, add onions and garlic
simmer for 1 minute, add spinach
simmer for 1 minute, stirring
add recipe crumbles, cook for 1 minute, stirring
add crushed tomatoes, oregano, salt and pepper
simmer for 10 minutes
place cooked rotini n baking dish
stir sauce mixture over Rotini, bake at 350 for 1/2 hour
serve with fresh grated parmesan at the table (calories allow for 1 tbsp per serving)

    great recipe! so funny because i just went out and bought meatless ground meat, frozen spinach and some sliced portabello mushrooms. didn't know what to do with it yet, until i found this. delicious. - 4/21/08
