Roasted Vegetable Quinoa

Ingredients
Zucchini, sliced 1/2 cupSquash, summer, sliced 1/2 cupOnions, red, large diced 1/2 cupMushrooms, sliced 1/2 cupGarlic, chopped 2 tsp.Olive oil, extra-virgin 1 Tbsp.Quinoa 2 cupWater 2-1/4 cup
Directions
Cut all the vegetables according to recipe. Add garlic and xvoo. Roast in oven for 20 minutes. While veggies are roasting, cook the quinoa. When quinoa and vegetables are done, mix together in a saute pan and season with sea salt and fresh ground black pepper to taste.
