Wild Rice Salad with Orange & Cumcumber

FOR SALAD:1 1/3 C Wild Rice cooked and cooled1 C colorful sweet peppers diced- red, yellow, orange1/2 medium cucumber, scored, halved lengthwise, sliced1 orange, lg. peeled, pith & seeds removed, diced1/4 C red onion finely dicedgenerous amount of chopped flat-leaf parsleyFOR DRESSING1 clove garlic crushed or finely chopped1 TBS rice or balsamic vinegar4 tsp Olive oilSalt, Pepper to taste
Make dressing first by putting dressing ingredients in a small container with a lid. Shake vigorously. Set aside.
Salad:
Be sure rice has been thoroughly drained and cooled. Pour in the dressing and gently stir to coat the rice.
Then stir in the other salad ingredients except for oranges. After salad is mixed to satisfaction sprinkle on the diced oranges. Ready to serve or can be chilled and then set out again 20 min before serving. A slightly less than chilled salad will have richer flavor.
