64 fl oz chicken stock50 g ginger root, chopped4 cloves of garlic, chopped2 stalk of lemon grass2 red chilin, seeded and chopped16 0z chicken filets2 red bell pepper10 small mushrooms2 tbsp fish sauceJuice of 1.5 lime2 13.5 cans of coconut milk5.5 oz Rice Noodlehttps://thefoodtographer.wordpress.com/2009/08/03/tom-kha-gai-soup/
Bring chicken stock to a boil with ginger, garlic, lemon grass and chili. Let boil a few minutes while you cut the chicken in bite size dices, then add the chicken. Let boil for about 3 minutes and add the rest of the ingredients.
Serve with fresh cilantro.
