Thai Peanut Sauce

Adams 100% Natural Creamy Peanut Butter, 1/2 cup Thai Kitchen Lite Coconut Milk, 12 ozcoconut/palm sugar, .3 tbspBragg Liquid Aminos (1/2 tsp 2.5 ml), 4 tspGround Garlic Cloves, .5 tspSun Luck Chili Oil, 2 tspDistilled White Vinegar, 1 servingSriracha chili sauce by Huy Fong Foods (1 tsp=5g), .25 tsp
Either grind peanuts to make fresh peanut butter or use 100% all natural peanut butter like Adams.
Mix all ingredients together in a blender, food processor or with a stick blender.
Pour sauce into a small sauce pan and cook over low heat for about 10 minutes until it thickens slightly. Be careful not to burn it. Watch it closely, scraping the sides down and stirring the bottom regularly.
Serve over chicken or noodles or as a dipping sauce.
Add more chili oil or chili sauce to taste.
Serving Size: Makes 1 cup total or 4 servings of 1/4 cup each.
