Ruth's Low Calorie Cornmeal Pancakes

Ingredients
1 egg2 egg whites2 teaspoons olive oil1/2 cup buttermilk (or plain nonfat yogurt)1/3 cup cornmeal1/4 teaspoon salt (or less)1/4 teaspoon soda
Directions
Beat together the egg, egg whites, oil and buttermilk with a fork. Add the cornmeal, soda, and salt. Fry in an electric frypan (set at 350) or a griddle sprayed with nonstick spray. I use 2 tablespoons batter for each pancake. Serve with unsweetened applesauce or maple syrup and butter. Makes about 10 pancakes.
