Chicken Cacciatore

Ingredients
8 oz. cooked chicken breast, in chunks3/4 c. chopped or sliced green peppers3/4 c. chopped or sliced red peppers3/4 c. chopped or sliced onion2 cloves garlic(1) 14.5 oz. can diced tomatoes or 2 c. marinara sauce1 T. olive oil10 small black olives, sliced10 small green olives, sliced1 T. capers, drainedItalian seasoning - 1/2 tsp., or to taste4. oz.Barilla Plus penne or other whole grain pasta2 T. shredded romano or parmesan cheese
Directions
Heat olive oil in skillet. Add chunked chicken and sautee until mostly cooked. Set aside on paper towel.

Add peppers, onions, garlic and sautee until half cooked.

Add tomatoes (pasta sauce), chicken, olives, capers, and seasoning and simmer for 15 minutes.

May be served over rice or pasta
