Quinoa Pilaf

Ingredients
2 cups of uncooked Quinoa1/4 cup of shallotsone cup fresh diced mushrooms1/3 cup of diced(very small) Catrrotsone 2.5 cups can of chicken broth1/2 cup waterseason with herbs
Directions
Saute the shallots, mushrooms and carrots until mushroom looses juice. Mix in Quinoa siring often to brown for about 5 min add in water and chicken broth until boiling reduce heat cover and cook for about 20 min.
