Pepper-high Paella

Ingredients
1 large onion4 cloves garlic6 oz chicken breast (boneless, cut into pieces)2 links hot Italian sausage, crumbled1/2 of a turkey kielbasa, cut into pieces10 bell peppers, various colors1 can tomatoes1/2 c fresh parsley1 pinch saffron1/2 lb shrimp
Directions
Put 2 Tbsp oil in a large skillet or fry-pan. Add ingredients to the oil as you chop them. Onion, chicken, sausages, peppers, garlic, parsley. Add the can of tomatoes and 2 cups of water and simmer. Add 2 cups rice. Cover and simmer for 50 minutes or until rice is tender. Extra water may be needed. Add shrimp, push down into the rice mixture and cook an additional 10 minutes. Serve with lemon slices.
