Twice Baked Potatoes with Rosemary and Feta

Ingredients
10 to 15 tiny or 6-8 medium red potatoesolive oil -- approx 3 tbspone cup crumbled feta cheese rosemarysalt and pepper to taste
Directions
Preheat oven to 450 degrees. Poke potatoes with fork and place in a single layer on a baking sheet. Drizzle 2 tbsp olive oil over potatoes and bake 45-50 minutes. Remove baking sheets and cut an x in each potato and push down until potato opens up. Drizzle with remaining olive oil (or simply spray some on if you have a sprayer). Sprinkle with feta, rosemary, and salt and pepper. Return to oven and bake 15-20 minutes.

To grill, after scrubbing and placing holes in potatoes, drizzle 2 tbsp olive oil and place in a sealed tinfoil basket. Grill 25-30 minutes. Remove from grill and cut an x in each potato and push down until potato opens up. Drizzle with remaining olive oil (or simply spray some on if you have a sprayer). Sprinkle with feta, rosemary, and salt and pepper. Return to grill in unsealed packet for 5 minutes or so.
