4 Scallions - roughly chopped2.5 cm/1 inch piece of fresh root ginger, peeled and chopped1 lemon grass (citronella) stalk, finely chopped3 tbsp chopped cilantro (coriander leaves)2 garlic cloves, roughly chopped1/2 tbsp light soy sauce150 g /5 oz) tofu drained40 g (1.5 oz) breadcrumbs1 egg1 tbsp olive oil, for brushingblack pepper
Serves 2.
1) Place the scallions (spring onions *UK*), ginger, citronella (lemon grass *UK*) and garlic in a food processor and process lightly until mixed together and chopped, but still quite chunky.
2) Add the soy sauce, tofu, breadcrumbs, egg and black pepper and process until just combined.
3) Take 3 dessertspoonfuls of the mixture and pat into flat cakes, using wet hands. Place on a lightly greased grill pan (skillet), brush with a little oil and grill (broil) and under preheated hot grill for 2-3 minutes on each side until golden.
