Cheesy Mashed Cauliflower

CauliflowerLight Cream CheeseSkim MilkLight Shredded CheeseParmesan Cheese
Directions
Remove core from cauliflower, rinse and cut into small flowerettes. Added to boiling water and cook until fork tender. Drain, then mash, adding cream cheese, skim milk, parmesan cheese and half cup of the shredded cheese. Once fully mashed together, add to a glass baking dish. Top with remaining half cup of shredded cheese, and bake in oven at 350 degrees for 25 minutes.
