Lentil Stew, Slow Cooker

Ingredients
1 onion minced6 garlic cloves minced1 T vegetable oil1 T. grated fresh ginger1/2 t. ground coriander1 t. ground cumin1/2 t. ground cinnamon1/2 t. ground tumeric1/8 t. red pepper flakes4 cups water or more1 5 oz can coconut milk2 cups red lentils2 cups chopped carrots4 large red tomatoes1 cup frozen peassalt and pepper1/4 cup fresh minced cilantro
Directions
Add to slow cooker with washed lentils, cubed carrots, 4 cups water (or more as needed), plus 5 oz can full fat coconut milk. Cook on low for 6-8 hours. Stir in chopped tomatoes and cook on high for 10 minutes. Add peas and cook until warm through. Season with salt and pepper and dry or fresh cilantro.
