Vegetable Quiche

Ingredients
5 eggs, scrambled1 frozen pie crust3/4 lb. fresh spinach3 cloves garlic, sliced or crushed1 Tbs. olive oil1 cup julienned zucchini strips1/4 c. light vanilla soy milk
Directions
Bake in a preheated 375 Degree oven for 45 minutes. Let stand for 10 minutes before cutting/serving.
