Just Like Stuffed Baked Potatoes

16 ounces frozen cauliflower, steamed and chopped8 ounces cream cheese, softened8 ounces cheddar cheese, shredded4 green onions, sliced1/2 tsp salt1/2 tsp black pepperPaprika, optional

Steam cauliflower until just tender and chop into pieces.
Mix softened cream cheese, four ounces cheddar cheese, green onions, salt and pepper together in a mixing bowl. Gently stir in cauliflower and pour into an 8x8 square pan or 2-qt casserole dish. Top with remaining cheddar cheese and paprika.
Bake at 350 degrees for 20-40 minutes until bubbly around the edges and lightly browned on top.
