Shy's quick tuna cake over salad

TUNA CAKE:1 five ounce can tuna in water(drained)1 large egg1 tsp mayo1 tsp dijon mustardold bay or garlic powder, onion powder to tasteSALAD:one large head of Romaine, roughly chopped1 cup cherry tomatoes, halvedjuice of one lemon.salt and freshly cracked black pepper to tasteSauce:2 Tbsp Ketchup1 tsp horseradish
To make the tuna cakes, mix together tuna, egg, mayo, mustard and seasoning. place in two flattened piles in a preheated non-stick skillet. cook 2-3 minutes on each side until egg is cooked through. be gentle, or they will fall apart!
Toss romaine and tomatoes with juice of one lemon, salt to taste and fresh cracked black pepper.
mix ketchup and horseradish together.
Divide salad among two plates, top each with a tuna cake and one tablespoon sauce. enjoy!
