Avocado, Brown Rice, Tomato, Cucumber Salad

2cups (cooked) short grain brown rice1 avocado peeled, pitted & chopped1/2 an English Cucumber2 medium red, ripe, firm tomatoes3 stalks celery, finely chopped2Tbsp finely chopped red onion1 crushed garlic clovea squirt of lime juice14 sprays of Hellman's Balsamic Breeze salad spritzer
Chop all veggies but avocado & add to a bowl. Toss together. Chop avocado. Put in a cup/bowl & squirt with lime juice to coat lightly. Add to salad bowl. Add rice. Toss gently. Spray salad spritzer 7 times. Toss. Spray another 7 times. Toss. Set in fridge to let flavours meld. Serve.
