1 whole sweet Maya onion, sliced thin1 Anaheim chili, cored and seeded, diced8 oz rib eye steak, fat trimmed3 medium zucchini, diced1 bunch spinach, washed and stemmed2 cups fat free chicken broth2 tbsp OlivExtra (canola/olive oil blend)
In a large pot such as a dutch oven over high heat, add 2 tbsp oil and saute onions until softened, 2 minutes. Add diced chilis, cook 1 minute more. Add beef. saute until all vegs are wilted and beef is browned on all sides. Add broth and bring to a boil. Add zucchini and cover, cooking until almost done. Add spinach during last 5 minutes. Cook until wilted.
