Quinoa and Black Rice Salad with chicken breast

1 cup (dry) Quinoa.5 cup (dry) black rice1/8 cup pumpkin seeds1/4 cup sunflower seeds1 tsp canola oil1 cup mushrooms diced1 cup cucumber diced1 red pepper diced1/2 cup red onion diced1 cup parsley chopped18 ounces of skinless chicken breastDressing:1/8 cup olive oiljuice of 2 lemons2 cloves of garlic chopped1/4 cup of fresh mint chopped fine2 tbsp of rice vinegar
cook quinoa and rice separately and let cool. Fry chicken in non-stick pan and set aside. Add diced mushrooms to pan with canola oil and fry until golden.
Mix diced vegetables, seeds, cooled quinoa and rice, mushrooms and parsley in large bowl. Top with Chicken. Add dressing just before serving.
