Low Carb Baked Macaroni and Cheese

2 TBSP. corn starch1 tsp. salt1/4 tsp. pepper2 1/2 cups skim milk2 TBSP. margarine or butter2 cups (8 oz.) American or Cheddar cheese1 box Dreamfields elbo macaroni cooked and drained
1. In saucepan combine first 4 ingredients; stir in milk. Add margarine, stirring constantly, bring to a boil over medium-high heat and boil 1 minute.
2. Remove from heat. Stir in 1 3/4 cups shredded cheese until melted. Add cooked elbow macaroni. Pour into a greased 2-quart casserole. Sprinkle with reserved cheese.
3. Bake uncovered in 375 degree oven for 25 minutes or until lightly browned.
*If you like, you could also stir in 1 cup diced ham with elbows at Step 2.
