Guacamame (edamame guacamole)

Ingredients
1 pound shelled edamame (freezer section of most grocery stores)1 teaspoon salt1 tablespoon chopped garlic5 tablespoons olive oil1 tablespoon fresh lime juice1 teaspoon sugar or sugar substitute equivalent1/2 teaspoon fresh ground black pepper
Directions
If edamame beans are still frozen, cover with hot/boiling water to quickly defrost. Remove beans from water. Pour edamame and remaining ingredients in food processor or blender. Puree until smooth. Add a bit more olive oil if you prefer it creamier or a can of green chilies and a spinkle of cumin if you like it spicy. Makes 20 1-oz. servings.
