Applesauce Oat Muffins

2 eggs2 cups applesauce, unsweetened5 cups old fashioned rolled oats1 banana mashed2 3/4 cup milk1/4 cup flaxseed meal6 packets of stevia1 tbsp ground cinnamon3 tsp baking powder1 tsp vanilla extract1 tsp salt*optional toppings: raisins, walnuts, chocolate chips, cranberry. Cranberry is best so far.
mix eggs, vanilla, applesauce, banana, and stevia in a LARGE bowl. add in oats, salt, baking powder, flax, and cinnamon and mix well with wet ingredients. pour in milk and combine. pour mixture evenly into muffin tin (use paper cups or spray WELL). add toppings before baking. if using fresh or frozen fruit, drop directly into batter. bake 30 minutes until toothpick in center comes out clean.
