gluten-free, sugar-free peanut butter cookies

Ingredients
-1 cup creamy peanut butter-6 T sugar-free maple syrup (I used Walden Farms)-1 large egg, beaten-1/2 t salt-1/2 t baking soda
Directions
1) Preheat oven to 375.
2) Combine the ingredients in a bowl and stir until thoroughly mixed.
3) Dollop about one tablespoon of batter per cookie on a cookie sheet. Flatten with a fork.
4) Bake for 15-20 minutes, until golden brown. Remove from cookie sheet and let cool on wire rack.
