Lacey's Vegan Burritos (Engine 2 compatiable)

1 package Morning Star Meal Starters Crumbles1 can of Mexican Corn (without beans, drained)1 can black beans (rinsed and drained)1 can of Rotel Tomatoes and Green Chilies1 packet taco seasoning1 avocado (skin and seeds removed, mashed)Juice of 1 wedge of lemon and lime1/4 tsp Tony's Creole Seasoning8 whole wheat tortillas (check the label!)2 cups fresh spinach1 cup salsa
In a large skillet, heat first 5 ingredients until hot throughout and a good thick burrito filling consistency. Mash one avocado with juices and seasoning.
Roll up each tortilla with a little of the "easy guac", a generous helping of burrito filling, spinach, and some salsa. (We used about 3 or 4 leaves of spinach and about a tbsp of salsa.)
Serving Size: Makes 8 burritos
