Cocoa Meringues

Ingredients
3 egg whites3/4c sugar3 T cocoa powder1/2 t vanilla extract1/8 t cream of tartar
Directions
Preheat oven to 325 F. Begin whipping egg whites. Add cream of tartar. Blend together sugar and cocoa; gradually add to egg whites after a froth has begun (about 2-3 Tbsp at a time). The mixture should end up with a glossy sheen, stiff peaks (think the "blizzard" test: if it holds its shape, it's done) and not be grainy. Drop onto greased unlined baking sheets and bake for 25 minutes. The meringues will double in size.
