Cottage Cheese and Nutmeg Pancakes

Ingredients
1 egg, separated1/2 cup nonfat buttermilk1/2 cup nonfat or reduced cottage cheese2 tablespoons butter, melted1/2 teaspoon vanilla1/3 teaspoon grated nutmeg1/2 tablespoon sugar1/8 teaspoon salt1/4 teaspoon baking soda1/2 cut white wheat, all-purpose flouroil or butter for the pan.
Directions
Whisk the yolks and buttermilk together in a bowl. Stir in cottage cheese, butter, and vanilla. Add the dry ingredients and whisk them together in a few swift strokes. Beat the the egg whites until they form soft peaks, then folk them into the batter.

Sweeten a little reduced or fat free sour cream with Splenda, and serve with sliced strawberries and sour cream.

These are a bit like pancakes, a bit like crepes. Would be good with a savory topping, as well

Makes 6, 4-inch pancakes. Easily doubled for more.
