place eggs, water and flour in mixer bowl. attach bowl and flat beater to mixer. turn to speed 2, mix for 30 seconds.
removed flat beater, attach dough hook. turn to spead 2 and knead 2 mins.
hand knead dough for 30 seconds to 1 min. cover with dry towel and let rest 15-20 mins before putting through pasta maker.
cut into 4 parts. smooch down till it's about 1/4 an inch thick and run through pasta machine. repeat instructions for machine.
