6 C. Popped Popcorn 1 C. Slivered Almonds 1/2 C. Red & Green Candied Cherries, Chopped 1 1/2 C. Splenda 1/2 C. Dark Corn Syrup 1/2 C. Water 1/2 tsp. Salt 2 Tbsp. Smart Balance Light Buttery Spread 1 tsp. Vanilla Extract
1. In a greased 13-inch x 9-inch x 2-inch baking pan, combine popcorn, almonds & cherries. Bake at 350 degrees F for 10 minutes. Turn oven off & keep mixture warm in the oven. Meanwhile, in a large heavy saucepan, combine the Splenda, corn syrup, water and salt; cook & stir over low heat until Splenda is dissolved. Cook over medium heat, without stirring, until a candy thermometer reads 305-310 degrees F (hard-crack stage). Remove from the heat; stir in butter & vanilla. Immediately pour over popcorn mixture; toss gently. Spread onto a greased baking sheet. When cool, break into small pieces.
