Herb Vinaigrette

Ingredients
1 tablespoon Dijon mustard1 tablespoon minced shallots2 tablespoons white wine vinegar1/2 teaspoon salt1/4 teaspoon freshly ground black pepper1/2 cup vegetable oil2 tablespoons extra-virgin olive oil1 tablespoon chopped fresh parsley leaves1 tablespoon chopped fresh chives2 teaspoons chopped fresh tarragon leaves
Directions
In a medium bowl, whisk together the mustard, shallots, vinegar, salt, and pepper. Slowly drizzle in the vegetable oil, whisking constantly to form an emulsion. Whisking, slowly add the extra- virgin olive oil. Fold in the herbs, adjust the seasoning to taste, and serve.
