Quinoa Salad

Ingredients
2cups dry quinoa 3 cups tomatoes chopped1.5 cups onion chopped1.5 cups cilantro chopped lime juice from 3 limes2 tbsp olive oil2 tbsp Hemp oil1 tbsp Macadamia oil3 tbsp dry oregano.5 tsp groud cumin1 tsp ground chile de arbol (optional or cracked pepper flakes)sea salt and pepper to taste
Directions
cook quinoa in 4 cups of water along with some salt and the 3 tbsp of dry oregano

To make the dressing add the onion to the bowl first and squeese the limes onto the onion and toss then add the oils cumin salt and pepper and optional chile.

fluff up and cool quinoa. add the tomatoe cilantro and the onion dressing mix and toss.

Serving Size: makes about 10-12 one cup servings (calories calculated for 12 serv)
