Ben's kickin' Mango Salsa (fish or chicken topping)

Ingredients

2 tbsp olive oil1/4 cup diced red onion1/4 cup diced white onion2 stalks of Green Onion, sliced into 1/4 to 1/8"1 jalapeno, finely chopped, seeds removed2 ripe mangos, diced.2 Tbsp fresh shoppoed cilantro2 Tbsp fresh mint3 tbsp lime juice2 medium tomatoes, finely diced4-6 Garlic Cloves (large), Minced
1. Chop all vegetables, keep Tomatoes/mango separate
2. Add Olive Oil to a nonstick cook pan, preheat.
3. Add all vegetables except the tomatos and mango, sauteee until onions are translucent (cooked).
4. Remove from heat and place sauteed vegetables in medium sized mixing bowl. Allow to Cool (10-15m). Mix in tomatoes, mango, herbs, lime Juice.
5. Refrigerate or serve over baked fish.
