Ingredients
6 Sweet Potato -- Cooked, Peeled, & Mashed1/4 C. Fat-Free Evaporated Milk1/4 C. Fortified Orange Juice1 tsp. Vanilla Extract1/2 C. Splenda1/2 tsp. Salt3 Tbsp. Smart Balance Light Buttery Spread, melted1/2 tsp. Ground Nutmeg1/2 tsp. Ground Cinnamon 1/3 C. Smart Balance Light Buttery Spread, melted3/4 C. Packed Splenda Brown Sugar Blend1/2 C. Whole Wheat Flour3/4 C. Chopped Pecans
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease one 2 qrt. casserole dish & set aside.
2. Blend together the sweet potatoes, evaporated milk, orange juice, vanilla, splenda, salt, 3 Tbsp. Smart Balance, nutmeg & cinnamon. Pour into prepared casserole dish.
3. Prepare the topping by mixing together the 1/3 c. Smart Balance, Splenda brown sugar blend, flour & pecans. Sprinkle over casserole & bake for 45 minutes or until hot.
