Vegetarian/Vegan Toasted Turkey Club Sandwich

2 slices light whole-wheat bread2 slices Smart Bacon2 slices (1/2 serving) Lightlife veggie "turkey"2 slices tomatoe2 leaves romaine2 tsp vegan low-fat mayo (I use homemade, from Happy Herbivore)
Toast your bread. Cut bacon strips in half.
Over medium heat, cook bacon strips in a pan sprayed with nonstick spray until crispy, about 5 minutes.
Spread mayo onto one piece of bread, and then top with the turkey slices, tomato, lettuce, and bacon. Finish it all off with the other piece of bread, and get chewin'!
Serving Size: makes 1 sandwich
