Asian Black Trumpet & Turkey Soup

3 Turkey Bratwurst links, sliced1 tablespoon soy sauce, reduced sodium1 quart beef stock2 teaspoons fresh ginger, grated2 large carrots, shredded, about 1 cup1/4 of a large head cabbage, about 2 1/2 cups, shredded14 grams black trumpet mushrooms - rehydrated3.5 grams of oyster mushrooms - rehydrated1 tablespoon sesame oil2 cups fresh bean sprouts1 teaspoon sriracha sauce4 tablespoons cilantro leaves, chopped3 spring onions, chopped
Brown the brat links in a pot with sesame oil, soy sauce, and ginger.
Add stock and bring to a boil.
Reduce heat to medium-high. Cook for two minutes, then add the carrots, cabbage, and mushrooms and cook another two minutes before adding the sriracha, and bean sprouts and cooking for final two minutes.
Remove from heat and garnish with cilantro and green onions.
Makes 8 (one cup) servings.
Serve with brown rice or rice noodles.
