3 lbs. skinless chicken breast cut into 60 pieces of chicken bits1 cup self rising flour2 cups egg substitute1/2 tsp paprika3 tsp garlic powder6 tbsp self rising cornmeal1 tsp salt1 tbsp black pepper2 cups panko bread crums
1. cut your chicken into 1/4 in-1 in. squares. should come up with around 60 pieces. set aside in a bowl
2. mix flour, cornmeal, panko bread crumbs, pepper, salt, garlic powder, and paprika in a bowl set to the side
3. pour 2 cups of egg substitute in bowl
4. dip your chicken in the egg substitute
5. dip coated chicken in the breadcrumbs
6. spray cookie sheets with olive oil, and lay your bread coated chicken on the cookie sheets not allowing them to touch.
7. pre-heat oven on 425 deg. and place cookie sheets in the middle. for 12-15min. then flip them over and cook for another 12-15min. till there golden brown.
