Ingredients
8 chicken thighs1 onion5 tomatoes3 stalks of celery2 Jalapenos1 cup brown rice1tsp coriander1tsp cumin2 packets Sazon Goya with Azafran1 packet chicken bouillon (powder)3 cups of water
Directions
Trim the fat on the chicken thighs and set aside. Coarse chop your vegetables. Sauté celery, peppers and onions in pan with 1 packet of Sazon. Add the chicken rice and chopped tomatoes when the sauteed veggies are slightly soft. Add the 2nd packets of Sazon, bouillon packet, coriander and cumin. 3.5 cups of water. Let cook for one hour in pressure cooker.
