Easy Watermelon & Feta Salad

Ingredients
Dressing:1 lemon, zested and juiced (use one teaspoon)1 lime zested and juiced (use one tablespoon)1/2 bunch cilantro or 1 bunch parsley, leaves only, chopped1/2 cup fat-free Greek yogurt1/4 teaspoon black pepperSalad:5-6 cups seedless watermelon, cubed* 2 stalks celery, sliced1 red onion, thinly sliced1/4 teaspoon black pepper2 tablespoons feta cheese, crumbled* If you can find a "personal" size watermelon, that's the perfect size for this recipe.
Directions
Whisk together the dressing ingredients in a small bowl.

Toss together all the salad ingredients with the dressing. Serve chilled.

Keep the salad and dressing separate until just before serving if you make this dish ahead.

Serving Size: Makes 8 cups, one cup per serving.

    I made this last night for my "day of retirement cocktail hour". I added about 1/3 cup of lite sour cream to increase the creaminess. It tasted great and everyone praised it (none had ever thought about watermelon in a salad before). Will make again and again.

    What a unique and refreshing salad this is--and a calorie bargain, too. Made it exactly as directed, except used only a quarter of a red onion because that was all I had in the house. Interesting flavor combinations; watermelon becomes less fruit-like and more vegetable-like. Yum. Will make again. - 6/21/12

    It was just ok, would make again. Didn't care for the dressing at all. I prefer my own watermelon salad. I mix watermelon, few pistachios over arugula. lighter dressing made from extra virgin olive oil, blood orange vinegar, couple DROPS of agave, salt and pepper, micro-cilantro optional. - 6/21/12

    GROSS! What a complete waste of money on these ingredients. I made this as a main dish salad for me and my husband. It's now in the trash and a Kashi pizza is in the oven. I followed the directions exactly using cilantro and added olives as the Tip suggested. - 6/4/13

    Hard to believe these ingredients go so well together but they do! I made some minor adjustments-used the entire 5 oz container of Greek yogurt and added 1 Tbl of honey to the dressing and I cheated, was out of fresh cilantro so used 1-2 Tbl of the refrigerated tube.     Tasted okay. Steamed my onions and let it cool before adding. Great variety for me rather than plain watermelon. May add a little honey next time if watermelon is not sweet. - 7/30/12
