Mock Mashed Potatoes

Ingredients
1 large head of cauliflower2 tablespoons of butter2 cloves garlic2 oz cream cheese
Directions
Bring 1-2 inches of water to a boil in a large pot with vegetable steamer inside
Cut cauliflower flowerets in half and chop stems
When water comes to a boil put cauliflower and garlic into vegetable steamer
Cover and boil for 10 minutes
Strain cauliflower in a collandar
Puree cauliflower, garlic, butter, and cream cheese in a food processer until the consistency of mashed potatoes

Serving Size: makes 6 1/2 cup servings
