Toom - Middleastern Garlic Spread

Ingredients
Salt, 2 tsp*Canola Oil, 4 cup*Lemon Juice, .5 cup1 Cup Garlic Cloves
Directions
Place garlic and salt in a food processor, pulse until finely chopped.

With processor running slowly add 1/2 cup of the oil in a thread like stream. Once combined, add 2 tsps of the lemon juice, one at a time. Slowly add another 1/2 cup of the oil, followed by a TBS of the lemon juice. Take your time, allowing time for each ingredient to emulsify. Continue in this manner until you have used all lemon juice and just need to process in the last of the oil. Scrap down the sides of the bowl and process for a final two minutes. Mixture should be the consistency of mayonnaise.
