Lentil Burgers

Cooked Lentils, 1.5 cup (remove)Egg, fresh, 1 large Slightly Beaten (remove)*Breadcrumbs (Progresso/seasoned) 1/4 C. (28g), 2 serving (remove)Olive Oil, 2 1tsp (remove)
lace lentils in the workbowl of a food processor. Pulse until mostly pureed, leaving some whole lentil pieces. Turn into a mixing bowl and stir in the egg and 1/4 cup of breadcrumbs. Cover and refrigerate for two hours, or overnight.
Remove lentil mixture from the refrigerator and stir in the remaining breadcrumbs. Shape into 4 to 6 patties. Meanwhile, heat olive oil in a nonstick skillet over medium heat. Add patties and cook until golden brown all over, about 3 to 5 minutes on each side. Serve hot on toasted buns or over mixed greens.
