Italian Chicken Pasta Toss

6 oz rice pasta, uncooked2 medium tomatoes, seeded and chopped1 small onion, chopped1 medium zucchini, sliced1 small red pepper, cut into strips2 teaspoons olive oil2 cloves garlic1/2 lb boneless skinless chicken breasts, cut into strips1/2 cup frozen peas1 t salt1 t Italian seasoning1 oz fresh Parmesan cheese, grated
Cook pasta according to package directions. Keep warm. While pasta is cooking, chop tomatoes and onion. Slice zucchini and red bell pepper. Heat oil over medium heat in skillet or stir fry pan. Press garlic into pan. Add chicken. Stir-fry 5 minutes. Add onion, zucchini, red pepper, peas and seasoning; stir fry 2 minutes. Add tomatoes. Heat 1 - 2 minutes. Remove from heat. Stir in warm pasta. Grate Parmesan over pasta. Serve immediately.
