Meat-Stuffed Bell Peppers

4 Bell Peppers, halved or tops cut away and seeds removed1 medium Onion, finely chopped1 medium Bell Pepper, finely chopped12 oz Lean Ground Beef1 tbs Garlic, minced (about 4 cloves)1/4 cup Cilantro, finely chopped1/2 tsp freshly ground Black PepperPinch Red Pepper Flakes1 cups cooked Brown Rice3/4 cup no salt added Tomato Sauce
1. Preheat oven to 325 degrees.
2. Place peppers on a large baking sheet cut side down and bake for 10-20 minutes, or until slightly softened.
3. While the peppers are cooking, heat a skillet over medium heat. Add the onions and chopped bell peppers. Cook and stir about 3 minutes. Add the beef, garlic, cilantro, pepper and pepper flakes. Cook until brown, about 6 minutes. Add the rice and tomato sauce and stir.
4. When the peppers are finished baking, stuff with the rice mixture. Raise oven temperature to 350 degrees and bake 25-30 minutes.
5. Remove from oven and allow to rest 10 minutes before serving.
