Chicken Vesuvio

Ingredients
1 T olive oil1 pound chicken breast, cut into 6 portions1 package baby potatoes (1.5 lbs / 680 grams), rinsed and cut into quarters2 cloves garlic, crushed1 t oregano1 cup chicken broth1 cup white wine
Directions
Preheat oven to 400 degrees.

Heat the oil in large oven-proof pot over high heat. Cook the chicken in the pot until golden brown on all sides. Remove chicken from the pan. Add the potatoes to the same pot and cook until they are golden brown, stirring occasionally. Add the garlic. Add the wine and broth and stir to scrape up any brown bits on the bottom of the pot. Add the oregano, and then return the chicken to the pot, and gently stir to combine all ingredients.

Cover and bake in the oven for 30 minutes. Transfer chicken and potatoes to a platter. Place pot over high heat and bring the sauce to a boil. Add the Smart Balance, and whisk until sauce has thickened a bit. Serve sauce with the chicken a potatoes.
